First Birthday Party

I bought two Fat Daddio’s baking pans in the 6 inch size. A very cute size! The 4 inch pans could have also been used. The cake was inspired by Sugarbakerz on Cakecentral.com. For the cupcakes I used an Ateco star tip. This was my first time to do a cupcake without a round tip. I liked the results!
60th Birthday Party

I was eager to attempt another layer cake for this party, but this time I wanted to use regular buttercream and not swiss meringue buttercream. I went to my favorite cake blog, Sweetapolita. And I referred to Smitten Kitchen for tips. But this time I forgot to bake at 300 instead of 350. Although I did get to try out my new bench scraper. This was a great tool for achieving a smooth surface! This was a Sweetapolita tip. I also forgot not to use too much icing for the filling so that I’d be sure to have plenty for after the crumb coat. I ended up having to make an additional batch of icing. And then one more batch for the cupcakes. Thank goodness I buy butter at Costco. In an effort to redeem all the time and effort spent, I feel obligated to indulge in buttercream frosting. But truthfully, I can only bear it in small quantities. Chocolate is the name of my game! Even so, this was a great recipe (Sweetapolita’s recipe) and the cupcake recipe was a Magnolia Bakery recipe (found on Sweetapolita’s blog). Yum! I was pleased with the overall results and I think I’m finally getting the hang of how to fill the cupcake liner. Less is more!
