First Birthday Party

Last week I made a smash cake for a friend’s little girl’s 1st Birthday Party. I bought two Fat Daddio’s baking pans in the 6 inch size. A very cute size! The 4 inch pans could have also been used. The cake was inspired by Sugarbakerz on Cakecentral.com. For the cupcakes I used an Ateco star tip. This was my first time to do a cupcake without a round tip. I liked the results!


60th Birthday Party

This weekend we had a 60th birthday party for my parents. I was eager to attempt another layer cake for this party, but this time I wanted to use regular buttercream and not swiss meringue buttercream. I went to my favorite cake blog, Sweetapolita. And I referred to Smitten Kitchen for tips. But this time I forgot to bake at 300 instead of 350. Although I did get to try out my new bench scraper. This was a great tool for achieving a smooth surface! This was a Sweetapolita tip. I also forgot not to use too much icing for the filling so that I’d be sure to have plenty for after the crumb coat. I ended up having to make an additional batch of icing. And then one more batch for the cupcakes. Thank goodness I buy butter at Costco. In an effort to redeem all the time and effort spent, I feel obligated to indulge in buttercream frosting. But truthfully, I can only bear it in small quantities. Chocolate is the name of my game! Even so, this was a great recipe (Sweetapolita’s recipe) and the cupcake recipe was a Magnolia Bakery recipe (found on Sweetapolita’s blog). Yum! I was pleased with the overall results and I think I’m finally getting the hang of how to fill the cupcake liner. Less is more!

Winter Wonderland

It’s Christmas cookie time! The only problem is there isn’t enough time to bake. Well, there’s enough time to bake some things, but not other things. Decorated sugar cookies are a huge, multi-bowl, powdered sugar like the snow all over the counter tops mess. And then there’s the drying time. All the cookies just sitting around taking up residency without paying rent. I take over all the counter tops as well as the dining room table. I have quite the cozy kitchen. That being said, when I take on a cookie project, I have to be strategic with timing and I generally have to do them for a reason. “I’m in the mood to bake” doesn’t qualify as a reason these days. But a Christmas party is always a good reason to bake, and that’s what this batch was for.
